You would need something like a Pocket Programmer. It comes with instructions and also lets you copy the information in a chip to a file.
[edit] Are they Exchangable in an existing circuit ?
So, how about exchangability ? Are 27(c)256 pin-compatible with 28256, or even 29256 ?
